How to Cook Jollof Rice: A Classic West African Delight

Jollof rice is a beloved West African dish known for its rich, smoky, and flavorful taste. Here’s a simple step-by-step guide to making the perfect Jollof rice:

Ingredients:

  • 2 cups of rice (preferably long grain or parboiled)
  • 1 can of blended tomatoes (or fresh tomatoes blended)
  • 1 red bell pepper
  • 1 onion (chopped)
  • 2 cups of chicken or vegetable broth
  • 2 tablespoons of Jollof seasoning
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • 1 tablespoon of tomato paste
  • 2 tablespoons of vegetable oil
  • Salt to taste

Instructions:

  1. Prepare the base – Blend the tomatoes, red bell pepper, and half of the onion until smooth.
  2. Sauté the onions – Heat oil in a pot and sauté the chopped onions until golden brown. Add the tomato paste and cook for about 3 minutes.
  3. Cook the sauce – Pour in the blended tomato mixture, add Jollof seasoning, thyme, curry powder, and salt. Let it simmer for 15–20 minutes until thick.
