Ingredients:
- 2 cups of rice (preferably long grain or parboiled)
- 1 can of blended tomatoes (or fresh tomatoes blended)
- 1 red bell pepper
- 1 onion (chopped)
- 2 cups of chicken or vegetable broth
- 2 tablespoons of Jollof seasoning
- 1 teaspoon of thyme
- 1 teaspoon of curry powder
- 1 tablespoon of tomato paste
